أسلافنا والأغذية … منكيشي نموذجاً

لو رجعنا إلى تاريخ ليس ببعيد لوجدنا قائمة من الأمراض المعدية كالسل والطاعون والملاريا والتيفوئيد والكوليرا وغيرها . كانت تفتك بآلاف البشر ، وكانت السبب الرئيسي في التعرض للأمراض ، ومن ثم الوفاة ، ومنهم الكثيرين من أسلافنا . وفي أيامنا هذه تناقصت تلك الأمراض قياساً بالماضي . فمرض القلب مثلاً في طليعة الأمراض التي تسبب الوفاة ، بل هومرض العصر الحالي ، بينما لم يكن معروفاً أو واضحاً في السابق ، وإلى جانب أمراض القلب والجلطة الدماغية هناك أمراض ضغط الدم ، والسكر ، وبعض أنواع مرض السرطان وأورام القولون ، والرئتين ، والمرض الجديد الخبيث كور*و*نا .

عند البحث والدراسة لتقصي الحقائق وللوقوف مع أسباب ظهور تلك الأمراض نجد أن نوعية الغذاء الذي كان الإنسان يتناوله يختلف كثيراً عما نتناوله في أيامنا . ففي قرى شمالنا الحبيب ، وبلدة منكيشي تحديداً والتي ترعرعت بها تكون لنا نموذجاً لغرض دراسة الحالة الصحية ، وسبب كثرة المعمرين فيها. فبعض أمراض هذه الأيام لم تكن موجودة بهذه الكثرة في أيام أجدادنا ، ولم نسمع بها في تلك الحقبة ، بل بدأت في خمسينات القرن الماضي ، وكانت السبب في ظهور السكتى القلبية وأمراض السرطان بأنواعه .
سأبحث في هذا الموضوع لأبرز علاقة الغذاء وتأثيره في صحة الإنسان وعمره ، وأجري بعض المقارنات بين غذائنا هذه الأيام مع غذاء الذين سبقونا . كذلك سأناقش موضوع أنواع أعمالهم والأجواء التي كانت محيطة ببيئتهم ، وما كتبه العلماء والباحثون في هذا المجال . فأنواع اللحوم والأغذية النباتية التي كانوا يتناولونها كانت تختلف في محتوياتها ونوعيتها وطريقة خزنها عن التي نستخدمها في أيامنا . فنصل إلى حقيقة قاطعة وهي أن طعامهم كان الأفضل للصحة ولإطالة العمر .
ليس لي إحصائية دقيقة في هذا المضمار ، لكن معظم العلماء متفقون على أن الإنسان الذي عاش في الماضي اعتمد على الصيد والنباتات البرية في غذائه . واليوم ما زالت بعض الفئات تتغذى على الموارد الطبيعية ، فيتمتعون بصحة جيدة ، كما كانوا أسلافنا الذين لم تكن لديهم اي تراكمات شحمية أو دهنية في شراينهم . ولا أي دليل على وجود مثل هذه الأمراض المنتشرة في البلدان الصناعية في عصرنا الحالي .
يقول العلماء أن البشرية بدأت قبل حوالي مليوني سنة ، وكان يقتات أولاً على الحشرات البرية ، ومن ثم تطور فأعتمد على النباتات . وفي العصور الحجرية صنع أدوات حجرية بسيطة واستعملها في الصيد ، فبدأ بأكل اللحوم . وإذا أردنا أن نربط مسألة الغذاء بالأرث الحضاري العالمي فإننا سنلتمس من خلال المكتشفات الأخيرة أن الكلدآشوريين هم أول من قدم أطباق الطعام على أرض الرافدين منذ ما يقرب من أربعة آلاف سنة ، وحول هذا الموضوع يقول البروفيسور ( جون بوتير) : أن تاريخ طهي الطعام يعود إلى ثلاث آلاف سنة معتمداً في ذلك على معلومات دونت على ألواح فخارية عثر عليها في بلاد ما بين النهرين في مدينة بابل . وفي تعليقه على هذا الموضوع يقول : لم يكن أهل البلاد بحاجة إلى أستيراد المواد الغذرائية من الخارج نظراً لوفرتها على أرض الوطن ، فتفننوا في استعمال وإعداد هذه المواد ، كما اتقنوا فن حفظ الطعام وتجفيفه وتمليحه . كما اتقنوا صناعة الأجبان والألبان وطحن الح*بو-ب وتهيأة الحساء . كما استخدموا النار بذكاء وخاصة بعد صناعتهم الطناجر ، وإعداد الفرن ( التنور ) وهذا ما أكدته لوحة مسمارية أخرى . هناك موسوعة كبيرة عن الطعام تحتوي على 800 كلمة و 2100 كلمة عن تحضير الطعام . أن هذه الطرق الخاصة في حفظ الطعام وتجفيفه وتمليحه استمرت في العصور اللاحقة إلى أن وصلت إلى قرانا الكلدوآشورية ومورست حتى السنين الأخيرة ، أي قبل وصول الطاقة الكهربائية . ففي منكيش مثلاً الجيل السابق المتمثل بآبائنا وأجدادنا كانت كل عائلة تحفظ طعامها بطرق طبيعية ، فيحفظون طعامهم لموسم الشتاء من الفواكه والخضراوات ومنتجات الألبان واللحوم . أتذكر جيداً عملية إعداد منتجات الح*بو-ب بأنواعها كل عام ، فكانت الأسرة وبمساعدة نساء الجيران يهبون معاً لأعداد مادة البرغل التي كانت تبدأ من مرحلة ( شلاقا دكركر ) فيتم تحضير الماء أولاً من العيون والسواقي القريبة مثل ( خرخيرا ) تضع في أواني كبيرة كالصواني ( لكني ) والقدور النحاسية الكبيرة ( مرِكلي ) . كانت تقليداً جميلاً عندما كان أهل المحلة أو الزقاق يجتمعون معاً في جوٍ خاص معبرين عن محبتهم وتعاونهم لبعضهم البعض . ولا يزال طعم الح*بو-ب المسلوقة المسماة ( خشي ) وكذلك الباذنجان الذي كان يسلق أيضاً مع الح*بو-ب في تلك القدور الكبيرة وكانت تسمى ( بنجاني شليقي ) مخزون ذوقها في ذاكرتي .

كان أهل منكيش يحفظون أطعمتهم من الحشرات الضارة والمكروبات التي تؤدي إلى إفساد الطعام ، لأن الطعام يبدأ بالفساد منذ لحظة إعداده ، والخضراوات والفواكه منذ جنيها . لهذا استخدموا طريقة تجفيف الخضراوات وبعض الفواكه في الشمس كالعنب والتين والخضراوات في الشمس . وطريقة التمليح للحوم أو تجفيفها ( قديدي ) أو خزنها بعد التمليح في أكياس جلدية ( درفي ) فالملح يمتص الرطوبة وتق*ت*ل البكتريا ، وفي السياق نفسه كانوا يحفرون حفراً في أرضية غرف الطابق الأرضي لكي يضعون فيها سنادين اللحوم المقلية المسمى ( قليا ) أو كانوا يحفرون حفر في الأرض ليحفظوا فيها الفواكه أو البلوط ثم تغطى بأوراق الأشجار أو القش لتكون حاجزاً لها ولتحفظها من التسوس ، وتسمى مثل تلك الحُفَر ب ( طمورتا ) . كذلك كان يخزن سنادين ال ( جاجك ) في حفرة تحت الأرض ثم تختم بالطين ( شيئا ) وهذا يمنع وصول بعض الحيوانات والحشرات إلى الجرّة ، كما يمنع تلوث الطعام.
كان الغذاء النباتي المصدر الأول للطعام فيكّوِن نسبة 75% من غذاء العائلة ، وكان يختلف كلياً عن الذي نجده في الأسواق الكبير في أمريكا وأوروبا .
ذلك لأنها كانت تنمو بشكل طبيعي وبدون أسمدة كيمياوية أو مبيدات الحشرات ، وبالإضافة إلى الفواكه والخضراوات المزروعة كان هناك نباتات برية مثل صُصيني ، صلمي ، علوسني ، بلوطي ، كصوصي وغيرها . ودرنات النباتات البرية كخبوشد أرا وبيفوكي ، راجع موضوع ( وردا أسحاق قلّو ” أنواع الحشائش والأعشاب في منكيش ” ) .
كانت الفواكه والخضراوات كثيرة ومتنوعة في فترة الصيف فكان يجفف قسماً منها في حرارة الشمس لكي تعد للإستعمال في فصل الشتاء مثل ( الزبيب ، التين ، المشمش ” قيسيي “، الرمان ، الكمثري ، الباذنجان ، الطماطم ، اللوبيا ، الفاصوليا ، ولخمد إنوي وغيرها ) . كما استخدم أسلافنا العسل الطبيعي والدبس كمحليات ، ونحن اليوم نستعمل السكر المكرر ، والبحوث العلمية التي اجريت على الفواكه والخضراوات البرية والمزروعة أثبتت أنها تحتوي على كميات كبيرة من فيتامين سي وعلى فيتامينات مهمة تدخل في تركيب الكالسيوم والمنغنيسيوم والفسفور . القيمة الغذائية في اللحوم ومشتقات الحليب المأخوذ من حيوانات بلادنا تختلف عن اللحوم والحليب المتوفر في الأسواق الكبيرة التي تحتوي منتوجاتها على مواد شحمية ودهنية بنسب كبيرة . فالحيوانات الأليفة التي تربى في المروج الخضراء في قرانا فحليبها يحتوي على نسبة قليلة من الشحوم قياساً بالتي تربى في المزارع التجارية ، فكل أنواع الحيوانات والطيور الداجنة تتحرك باستمرار في الحقول والوديان والهضاب وتتغذى على النباتات الطبيعية . فالدجاج تتغذى على ما تحصل عليه من ح*بو-ب وأعشاب البساتين المحيطة بالقرية مما يجعلها نشيطة وطليقة وفي حركة مستمرة فتفقد كميات من دهونها لتصبح لحومها وبيضها طعماً لذيذاً ورائحة طيبة . أن كمية السعرات الحرارية المستهلكة من قبل أسلافنا كانت قليلة حيث أن كمية البروتين كانت كثيرة ، وكمية الشحوم قليلة .
جمعية القلب الأمريكية أقترحت على أن تكون كمية الشحم أقل من 30% من مجموع السعرات ، وكانت كمية الشحوم وخاصةً اللحمية قليلة لأن كل عائلة لا تستهلك من اللحوم ما يعادل أستهلاك فرد واحد في وجبة واحدة أثناء ( الشوي ) في الوقت الحاضر . والنقطة الأخرى التي أروم التحدث عنها هي مادة الكالسيوم التي مصدرها الوحيد هو الحليب الذي نأخذه من الأسواق الكبيرة . فالحليب يختلف عن الحليب الطبيعي للأسباب التي ذكرناها ، وجسم الإنسان بحاجة إلى الكالسيوم وخاصة النساء ، وذلك لمنع مرض تآكل العظام وهذا المرض كان قليل الوجود في قرانا حيث كانت معظم النساء تعَمّر إلى العقد التاسع وهُنّ

في حيوية ونشاط دائم . ومادة الصوديوم الموجودة في ملح الطعام مهمة أيضاً في موازنة الضغط بين الخلايا وسوائل الجسم ، فكان استعمالها قليلاً مقارنتاً بالكميات التي تاخذها الآن . فعليه يجب الحذر من الإكثار منها ، ومادة الفايبر المتكونة من السليلوز والبكتين لها أهمية غذائية ، وهذه المادة موجودة في الح*بو-ب والفواكه ، ولها فائدة في منع أمراض الأمعاء وتقليل الإصابة بمرض السكر ، فالذين يستعملون قليلاً من الأنسولين باستطاعتهم تناول القليل منه عندما يتناولون كمية كبيرة من الفايبر . والتقليل من السكريات ، وكذلك كان طعامهم يحتوي على اسكوربك أسد وفيها فيتامين سي ومادة الحديد من اللحوم ،
ومادة الفلويد من الخضراوات والفواكه . لنراجع ما كتبه العلماء والباحثون في مجال علاقة الغذاء لنوعية العمل والجو ، وأهمية نشاط الجسم . هناك تجربة علمية أجريت على عشرة من المصابين بمرض السكر وضغط الدم العالي من سكان استراليا الأصليين الذين كانوا يعيشون حياة المدنية فيتناولون اللحوم ومواد دهنية ومشروبات روحية فاتفقوا على أن يعودوا غلأى حياتهم الطبيعية الأصلية والعيش على الصيد والنباتات البرية ، فأثبتت التجارب بعد شهرين من الحياة البرية هبوط ضغط الدم لديهم ، كما قل معدل الكلوكوز فزاد نشاطهم البدني بدرجة كبيرة ، قال الدكتور ( كيرن ) من جامعة ملبورن الذي أجرى التجربة ، أن التقليل من كمية الشحوم مع غذاء قليل الكلوريز له تأثير كبير في السيطرة على مرض السكر بالرغم
من تناولهم اللحوم بكثرة ، إلا أنها كانت من الحيوانات البرية النشيطة . وبعد إجراء الفحوصات بعد ستة أسابيع تبين أن كمية الدهون الثلاثية ، وهي نوع من الشحوم الموجودة في الحيوانات والنباتات وزيادة
هذا النوع من الدهون في الدم يسبب مرض القلب ومرض الأوعية الدموية والشريانية .
لقد اثبتت التجارب المختبرية على الحيوان عند وضعه في حركة داخل دولاب متحرك بأنه سيفقد كثير من نسبة الكوليسترول في الدم . وكذلك وجدوا بتجاربهم في فلندا على مجموعة من العمال لقطع وتحميل الأخشاب ، فكان معدل استهلاكهم اليومي 4700 كلوريز و 45% منها مصدرها الشحوم ، ففقدوا الكوليسترول الموجود في الدم بنسبة أكبر من الرجال الأعتياديين نتيجة نوع العمل الشاق ، يتضح من ذلك أن حركة الجسم تلعب دوراً كبيراً في فقدان الكوليسترول في الدم .
وأريد أن أضيف لهذا الموضوع ( المخ ) وعلاقته بالغذاء ، ليس لتعقيد الموضوع وإنما للمزيد من الإيضاح . إن التصميم الطبيعي لما يحتاجه المخ من عناصر غذائية عمره ملايين السنين . فقد أنشأ المخ
نُظِام إتصالات خاص معتمداً على الفواكه والخضراوات ونباتات برية ، وهيأ لنفسه نظاماً خاصاً لحماية خلاياه لأجل البقاء على قيد الحياة ، كما صنع جينات للتحكم في العمليات الحيوية أمدّهُ بها الطعام القديم . فالبنية الجينية وغذاء الجسم قد اجتمعا ليصنعوا مخاً يعمل كما صممت له الطبيعة . واليوم تتعارض أطعمتنا مع حاجاتنا المهمة ، بيد أن طعامنا قد تغير جذرياً خلال الخمسين سنة الأخيرة . فأضطر المخ إلى إستخدام عناصر غذائية ليست جزءاً رئيسياً من أصله التكويني أو الجيني ( راجع كتاب الدكتوربويد أيتون )

وهكذا ابتعدونا كثيراً من طعام اسلافنا ، فطعامنا اليوم يتكون من أطعمة جديدة لن يتناولها الذين سبقونا . وفي الوقت الحاضر توجد عادات غذائية سيئة وإتجاهات حديثة تضر أكثر مما تنفع ، وتسبب في الأنفجار الحالي للأمراض القلبية . وأمراض السرطان الخبيثة والأمراض المزمنة والحساسية . الوجبات الغذائية الخفيفة تساعد الجسم في محاربة الخلايا الخبيثة في الجسم . من الأفضل تناول الفواكه والخضراوات والأبتعاد عن التدخين ، مع ممارسة التمارين الرياضية في البيت ، وممارسة رياضة المشي بقدر الإمكان لأن ( الحياة حركة ) . لنحاول الأبتعاد من كل الأطعمة بعد فترة غروب الشمس وخاصة الوجبات الثقيلة لأن التمثيل الغذائي يقل في وقت الليل .

Our Ancestors and Food … Mangeshi as a Model

           If we go back in history, we find a list of infectious diseases such as tuberculosis, plague, malaria, typhoid, cholera and others. These diseases killed thousands of people and was the main cause of death, including many of our ancestors. In modern times, these diseases have decreased compared to the past. Heart disease, for example, is at the forefront of diseases that cause death.  Besides heart diseases, malignant cancers, and the new novel corona virus are among our newest pathogens.

While doing research for this article and to reduce the spread of emergence diseases, we find that the quality of food that a person used to eat differs greatly from what we eat now.  In the villages of our beloved North, in particular in the town of Mangeshi where I grew up, the diet of the past becomes a model for us in the purpose of studying health status.  I am interested in correlating this life style with the large number of centenarians in it.  Some diseases from the modern era did not exist in the days of our grandparents.   They were not prevalent in Northern Iraq at the beginning of the 20th century but rather began in the middle the century.

I will discuss this subject to highlight the relationship of food and its impact on human health.   I will also make some comparisons between our foods in the modern era with the food of our ancestors.  I will also discuss the issue of the types of their work and the atmosphere that surrounded their environment, and what scholars and researchers wrote in this field. The types of meat and plant foods that they ate were different in their contents, quality and method of storage from the ones we use today. So, I arrived to one hypothesis, which is that their food was the best for health and for prolonging life.

I do not have an accurate statistic, but most scholars agree that the human beings who lived in the past relied on hunting and wild plants for their food. Today, some groups still feed on natural resources, and they enjoy good health, as our ancestors who did not have any fat or fatty accumulations in their arteries. There was not any evidence of the existence of such diseases prevalent in the industrialized countries of our time.

Scientists say that humanity began about two million years ago, and was first subsisting on wild insects, then evolved to depend on plants. In the Stone Ages, he made simple stone tools and used them for hunting, thus he started eating meat. If we want to link the issue of food with the global cultural heritage, we will see through recent discoveries that the Chaldeans were the first to introduce food dishes on the land of Mesopotamia nearly four thousand years ago, and on this subject, Professor (John Potter) says: “The history of cooking food goes back to three thousand years, based on information recorded on pottery tablets found in Mesopotamia in the city of Babylon.” Commenting on this subject, he says: “The people of the country did not need to import foodstuffs from abroad due to their abundance on the land of the country, so they mastered the use and preparation of these materials, and they also mastered the art of food preservation, drying and salting.” They also mastered the manufacturing of cheese and milk, grinding grains and preparing soups. They also used fire cleverly, especially after making pans, and preparing the oven (Tanora), and this was confirmed by another cuneiform panel. There is a large encyclopedia, from that era, about food containing 800 words and 2,100 words about food preparation. These special methods of preserving, drying and salting food continued in the later ages until they reached our Chaldo-Assyrian villages and were practiced until the last years, that is, before the arrival of electric power.

In Mangeshi, previous generation represented by our fathers and grandfathers, preserved its food in natural ways, so they preserved their food for the winter season from fruits, vegetables, dairy products and meat. I remember the process of preparing grain products of all kinds every year. The family, with the help of the all-neighborhood women, would prepare bulgur, which started from the stage of (Shalaqa D’Korkor). The water was first collected from the springs and nearby streams such as (Kharkhira) placed in large pots such as trays (La Kani) and pots the large copperplate (Marikli). It was a beautiful tradition when the people of the locality or alley gathered together in a special atmosphere, expressing their love and cooperation for each other. The taste of the boiled grains called (Khashi), as well as the eggplant that was also boiled with the grains in those large pots, and it was called (Banjani Shliqi) still remains in my memory.

The people of Mangeshi used to protect their food from harmful insects and microorganisms that lead to food spoilage. Food begins to spoil from the moment it is prepared, and vegetables and fruits from the moment they are harvested. For this they used the method of drying vegetables and some fruits in the sun.  Items such as grapes, figs, dried apricot paste and many different vegetables were dried in the sun. Also there was the method of salting meat or drying it (Qadidi) then storing it after salting in leather bags (darfe). Salt absorbs moisture and kills bacteria. Also, they preserve fruits and oaks (Baloti), it is then covered with tree leaves or straw to create a barrier and to protect it from decay. Such pits are called (Temuryatha). They also used to store the (Jajik) in an underground pit then seal it with mud (Shu’la).  This prevented some animals and insects from reaching the jars and prevented food contamination.

       Plant food was the first source of food, constituting 75% of the family’s diet, and it was completely different from what we find in the large markets in America and Europe.

This is because the food was grown naturally and without chemical fertilizers or insecticides.  In addition to the cultivated fruits and vegetables there were wild plants such as Soseni, salmi, Alwasni, oaks, wild beans( Kasosi) and the tubers of wild plants, such as Khaboushi D’Ara and Pifuki.        Fruits and vegetables were many and varied during the summer period.  For the winter, some of fruit and vegetables were dried in order to be prepared for use in colder months.   Examples of fruits that were dried were raisins, figs, apricots, pomegranates, pears, eggplant, tomatoes, cowpeas, beans, and dried grape pasts (Lakhma d’ Inwi) among others. Our ancestors also used natural honey and molasses as sweeteners, and today we use refined sugar.  Scientific research conducted on wild and cultivated fruits and vegetables has proven that they contain large amounts of vitamin C and important vitamins involved in the synthesis of calcium, magnesium and phosphorous. The nutritional value of meat and milk derivatives taken from animals in our villages differs from the meat and milk available in large markets whose products contain fatty and fatty substances in large proportions. The domestic animals that are raised in the green meadows of our villages, their milk contains a small percentage of fat compared to those raised in commercial farms. All kinds of animals and domestic birds move constantly in the fields, valleys and plateaus and feed on natural plants. The chickens feed on the grains and herbs they get from the orchards surrounding the village, which makes them active and free and in constant movement, so they lose quantities of their fat so that their meat and eggs become delicious and smell good. The number of calories consumed by our ancestors was few as the amount of protein was a lot, and the amount of fat was low.

The American Heart Association suggests that the amount of fat that we consume should be less than 30% and saturated fat less than 10% of the total calories. The amount of fat, especially from meat, during the time of our forefathers was lower because they did not consume meat in the same amount as we do currently. The other point that I want to talk about is calcium, which is the only source of milk that we take from the big markets. Milk differs from natural milk for the reasons we mentioned, and the human body needs calcium, especially women, in order to prevent bone erosion disease (Osteoporosis). This disease was rare in our village.  Most of the women were in perpetual vitality and were active into their eighties and nineties.

The sodium in table salt is also important in balancing the pressure between cells and body fluids.  So, its use was little compared to the quantities we take in now. Therefore, one must be careful not to overdo it. The fiber material consisting of cellulose and pectin is of nutritional importance, and this substance is found in cereals and fruits, and it has a benefit in preventing intestinal diseases and reducing the incidence of diabetes. So those who use a little insulin can reduce it when they eat a large amount of fiber, and reducing sugars. Their food also contained iron and folate from meat.

       Let us review what scholars and researchers have written in regards to nutrition and quality of work, air quality, and the importance of remaining active. There was a scientific experiment conducted on ten people with diabetes and high blood pressure.  These people Australian aborigines who were living a more western life style, eating meat, fatty materials and consuming alcohol.   They agreed to return to their original natural diet and live on hunting and gathering wild plants. Their blood pressure, and their glucose rate decreased, and their physical activity increased significantly. Dr. Karen from the University of Melbourne, who conducted the experiment, said that reducing the amount of fat with a low-calorie diet had a significant effect in controlling diabetes despite eating a lot of meat, but they were from active wild animals. After conducting tests, it was found that the number of triglycerides, a type of fat found in animals decreased. This type of fat in the blood causes heart disease, vascular and arterial disease.

   They also found, while observing wood workers in Finland, that the group of workers that were cutting and loading wood had a consumption rate of 4,700 chlorides, 45% of which came from fats. They lost cholesterol in the blood by a greater rate than the normal men as a result of the type of hard work. It is clear from this that the movement of the body plays a big role in the loss of cholesterol in the blood.

       And I want to add to this topic (the brain) and its relationship to food, not to complicate the subject, but rather for further clarification. The natural design of the nutrients the brain needs is millions of years old. The brain developed a special communication system based on fruits, vegetables and wild plants.  It created a special system for itself to protect its cells in order to survive. The brain also made genes to control vital processes that were provided by ancient food. The genetic structure and the food of the body have combined to make a brain that works as nature designed for it. Today, our foods conflict with our most important needs, but our food has changed radically over the last fifty years. The brain was forced to use nutrients that were not an essential part of its genetic or structural origin.        Thus, we have moved away from the food of our ancestors, for our food today consists of new foods that those who preceded us did not eat. At the present time, there are bad eating habits and modern trends that do more harm than good.  Some have caused the current explosion of heart diseases. Others have led to malignant cancers, chronic diseases and allergies. Light diets help the body in fighting malignant cells in the body. It is better to eat fruits and vegetables and stay away from smoking, while exercising at home, and walking as much as possible because life is a movement. Let’s try to stay away from foods after sunset, especially heavy meals, because metabolism decreases at nighttime.
